Pork Sirloin Tip Roast, PW's Creamy Mashed Potatoes, & Mushroom Gravy

 I got a new cookbook and I LOVE IT. The Pioneer Woman Cooks by Ree Drummond


For the pork roast:
I preheated the oven to 350 degrees
I took one can of Campbell's Cream of Mushroom soup, one yellow onion(cut into chunks), and 5 pieces of garlic(also cut into chunks). I combined all these into the roasting pan and put 2 small Pork Sirloin Tip Roasts in. I covered it with foil and put it in the oven for about an hour. Oh yeah, before I covered it up I seasoned the top of the roasts with salt, pepper, and some savory spice mix.

For the mashed potatoes, I followed a recipe in my new cookbook. My oh my soo good. If you want the recipe you'll have to buy the book. I'm keeping hush on this one. ;-)

Now the gravy. Once the roast was done, I used 3 big ladles full of the juice and put it in a pan. To my juice/drippings I added one heaping tablespoon of flour and let it start to thicken up. Once it started to get a little bit thick I thinned it back out with some half and half. This made the gravy really creamy. I heated it back up again just before it begins to boil, keep whisking the gravy so it doesn't burn. The thickness is your call.



WE HAVE ALSO BEEN BUSY AROUND HERE GETTING READY FOR HALLOWEEN. THIS TIME OF YEAR IS MY FAVORITE. I HAVE ALWAYS ENJOYED HALLOWEEN AND MY GIRLS REALLY LIKE IT TOO. WE HAVE BEEN DECORATING THE HOUSE AND MAKING YUMMY FALL TREATS. WE MADE CARAMEL APPLES YESTERDAY. THEY WERE AWESOME. I MADE PLAIN AND SOME OF CHOCOLATE CHIPS ON THEM. TALK ABOUT SUGAR OVER LOAD.

I'm back
